Some of the most exclusive and popular restaurants are located in Polignano a Mare, a little town by the sea with a very romantic atmosphere. Apart from Antiche Mura, they all overlook the sea bay of Polignano, one of the most beautiful bays in the region and offer, besides excellent food, a magnificent view.

APULIAN DELIGHTS
Pasta

- Orecchiette e cime di rapa” or “Orecchiette e rucola”, fresh pasta with curly kales or racket only seasoned with garlic olive oil and anchovies.

- “Spaghetti alla San Giovanni”, spaghetti with tomato sauce, olives and capers.

- “Bruschetta”, grilled bread seasoned with cherry tomatoes, salt, olive oil and rocket.

- “Focaccia”, traditional baked bread base seasoned with tomatoes, olive oil and olives.

- “Popizze”, bread dough fried and seasoned with salt, soft inside.

- “Calzone”, bread dough pies, traditionally stuffed with curly kales or onions and cheese but also with a great variety of other ingredients.

Fish & Meat
- “Crudo di mare”, raw fish, mainly served as starters

- “Patete Riso e cozze”, baked dish with mussels, rice, potatoes, onions and parsley.

- “Zuppa di mare” mix of fish cooked in tomato sauce, eaten with bread or pasta.

- “Impepata” mussels with tomato sauce, garlic and parsley.

- “Braciole”, veal or pork meat rolls stuffed with cheese, ham and garlic and cooked in tomato sauce.

- “Soppressata”, pork wide salami preserved in olive oil.

Desserts
- “Zeppole” fried sweet pancakes served with custard cream and sour cherries preserve

- “Cartellate” fried pastries covered with vincotto and casting sugar

- “Gelato al forno” baked ice cream

Wines
Apulia and Bari’s province in particular are well-know for their wines. Locorotondo, Castel del Monte and the whole Salento area produce the best red and white wines in the hwole region. Try also the “Primitivo”, a local variety served as house wine in little picturesque jars in almost every restaurant.


Cisternino
Places to experience are San Michele Salentino and Cisternino in the province of Brindisi. Approximately one-hour drive but most certainly worth it. Both villages have an “old town” like Bari, with romantic little white streets where grilled meat and sausages are served at any time of the day. A must-try experience!
